Apple and Cinnamon Muffins

Apple and Cinnamon MuffinsApple and Cinnamon – flavours that say Wintertime and Christmas! A perfect partner to a warm glass of mulled wine, especially if you like outdoor gatherings for Autumnal festivities like Halloween or Guy Fawkes night.

Like our other muffins, these can be whipped up in a matter of minutes, but are best left to cool down until just warm before eating. They  are a few more calories than most other muffins, but are still only a fraction over 3 carbs each. Go on, treat yourself!

12 muffins – 10 carbs each. 118 calories each


  • 160g of Carbquik
  • 40g of Ground Almonds
  • 40g of Almond Flour
  • 30g of melted butter
  • 1tsp baking powder
  • Truvia (sweetener to taste) I usually use 2.5 tbsp
  • pinch of salt
  • 3 eggs
  • Full fat milk (around 100mls, but add more or less to get a soft, but not runny, consistency)


  • 1 Medium cooking apple, skinned and finely diced 
  • 2tsp Cinnamon, heaped
  • small knob of butter, melted


Apple and Cinnamon MuffinsMix the cinnamon with the diced apple apple and butter – put the mixture in a non stick pan on a low heat until the apple is soft and starting to take on a little colour.

Toss the dry ingredients together into a bowl and mix well. Add the eggs and melted butter and most of the milk, the apple/cinnamon mixture and mix well. Keep adding milk until you get a soft consistency but NOT runny.

Once all the ingredients are well mixed divide into 12 cupcake containers. I use cupcake papers as I find it easier to get them out afterwards.

Place in the middle of the oven at 160C for 20 minutes. These cakes set firmer once cool, don’t handle too much whilst hot.
